Eggnog Cake

Makes 12 servings

Cake Ingredients:
  • 4 large eggs
  • 1 box French vanilla cake mix
  • 1 pkg. vanilla instant pudding
  • 1/2 cup water
  • 1/3 cup vegetable oil
  • 2 tsp. rum extract
  • 1 1/2 tsp. ground nutmeg
  • 1 2/3 cups Nestle Toll House Swirled Holiday morsels, divided
Cake Directions:
  1. Preheat oven to 350.
  2.  Grease and flour 13 x 9 in. baking pan.
  3. Beat eggs in large mixer for 1 minute until frothy. 
  4. Add cake mix, pudding mix, water, oil, rum extract, and nutmeg.
  5.  Beat on high for 2 minutes. 
  6. Stir in 1/2 cup morsels. 
  7. Spread in pan. 
  8. Sprinkle with 1/2 cup morsels over batter. 
  9. Bake for 35 - 40 minutes or until wooden 
  10. toothpick inserted comes out clean. Cool completely in pan on wire rack.
Frosting Ingredients:
  • 8 oz. cream cheese, softened
  • 2 Tbsp. butter, softened
  • 2 cups powdered sugar
  • 1/2 tsp. ground nutmeg
Frosting Directions:
  1. Beat cream cheese and butter with mixer in a small bowl until smooth.
  2. Gradually add in powdered sugar and nutmeg. 
  3. Beat until smooth.
Decorating Directions:
  1. After cake is completely cooled, frost cake. 
  2. Sprinkle with remaining morsels and serve.
