Oatmeal Carmelitos Bars

Oatmeal Base:
  • 2 cups all purpose flour
  • 2 cups quick cooking oats
  • 3/4 cup packed brown sugar
  • 1-1/4 cup softened butter
  • 1 tsp. baking soda
  • 1 tsp. salt 
Directions:
  1. Preheat oven to 350 degrees. Grease 13" x 9" baking pan.
  2. In a large bowl, beat base ingredients with electric mixer on low speed
    until crumbly.
  3. Reserve 1/3 of the crumb mixture for topping.
  4. Press remaining crumb mixture in bottom of pan.  Bake 10 min.  Remove from
    oven and add filling mixture.
Filling:
  • 12 oz. jar Carmel Ice Cream Topping (option: use Sugar Free Carmel topping)
  • 3 TBS flour
  • 1 cup chocolate chips
  • ½ cup chopped walnuts or pecans
Directions:
  1. While base is baking combine caramel topping and 3 TBS flour in a small
    bowl.  Set aside.
  2. Sprinkle the chocolate chips and nuts over the baked base.  Drizzle evenly with the caramel mixture. Sprinkle with reserved crumb mixture.
  3. Bake 18 ? 22 minutes or until golden brown.
  4. Cool completely in pan on rack.
  5. Cut into bars.  Refrigerate 1 - 2 hours or until filling is set.
