Double Yum Double Stuffed Potatoes

Makes 6 - 8 servings
Ingredients:
- 6 large Bakers potatoes
- 1/2 lb. of bacon
- 1 cup
butter, softened
- 6 oz. cream cheese, softened
| - 1/2 cup of milk
- 1/2 cup of chives
- 2
cups grated cheddar cheese
- salt and pepper to taste

Directions:
- Rub potatoes with butter or shortening. Poke holes in each
potato with fork.
- Bake at 400 degrees for 45 minutes.
Allow to cool slightly.
- While potatoes are baking fry
bacon and crumble into pieces. Set aside.
- When potatoes
are ready cut slit in top of each potato and scoop
out insides into
a bowl, trying to keep skins intact. - Mix the butter,
cream cheese and milk with potatoes. Add salt and pepper to taste. Stir
in bacon and chives.
- Put filling back into potatoes. Top
with cheddar cheese.
- Place potatoes on baking sheet and
bake at 350 degrees for 30 minutes.
