Double Yum Double Stuffed Potatoes

Makes 6 - 8 servings

Ingredients:
  • 6 large Bakers potatoes
  • 1/2 lb. of bacon
  • 1 cup butter, softened
  • 6 oz. cream cheese, softened
  • 1/2 cup of milk
  • 1/2 cup of chives
  • 2 cups grated cheddar cheese
  • salt and pepper to taste
Directions:
  1. Rub potatoes with butter or shortening. Poke holes in each potato with fork. 
  2. Bake at 400 degrees for 45 minutes. Allow to cool slightly. 
  3. While potatoes are baking fry bacon and crumble into pieces. Set aside. 
  4. When potatoes are ready cut slit in top of each potato and scoop
    out insides into a bowl, trying to keep skins intact. 
  5. Mix the butter, cream cheese and milk with potatoes. Add salt and pepper to taste. Stir in bacon and chives. 
  6. Put filling back into potatoes. Top with cheddar cheese. 
  7. Place potatoes on baking sheet and bake at 350 degrees for 30 minutes.
